In this article, I want to explain what the difference is and how, even though they are very different in both shape and size, they can be used to turn and cook your pizza in your favourite pizza oven!

What is a turning peel?
It's designed to be used to turn a pizza inside the pizza oven. It's not used for launching pizza into the oven. They are round and come in various sizes from 7" which is very common up to 12" and maybe more!
The reason why turning peels are so popular with pizzaiolos is due to the fact that the pizza retains the heat of the oven at all times within the oven even whilst it is being turned. This enables a faster and more consistent pizza cook.
What is a standard metal pizza peel?
These come in various sizes, most are around 12" and 14" and can be used for launching a pizza into the oven as well as turning the pizza outside of the oven.
These peels are square-shaped and are designed to allow you to retrieve the pizza from the oven, to turn it outside with your hands and then place the pizza back into the oven.

There are advantages and disadvantages to using both peels:
- Turning pizza peels allow the cook to move the pizza inside the oven without removing the pizza from the heat of the stone. This takes a bit of practice but once you've got the hang of it you'll find this to be the better way to cook pizza in your oven.
- The square peels are great for beginners and allow you to check on your pizza whilst it is being cooked by removing the pizza from the oven to turn it and at the same time you can check the crust and the toppings.
