Trying Out Two Types of Mozzarella Cheese on a Pizza!
I tested two different types of mozzarella cheese – buffalo and block, cooked on a pizza in a gas-fired pizza oven (Ooni Koda 12) – check it out in this vid!
I used buffalo mozzarella and block mozzarella – they have different moisture levels, a different taste and a very different cook in a high heat pizza oven.
This is Part 2 of the Mozzarella Cheese test. I have 2 videos that have tested mozzarella cheese on cooked pizza topped with 3 different types of mozzarella:
- Buffalo Style Mozzarella
- Block Mozzarella
- Pre-Grated Mozzarella
Which cheese cooked and tasted the best using a high heat pizza oven?
As I expected, the buffalo style mozzarella, being a very moist cheese, cooked perfectly in the 500c pizza oven – it also tasted the best too!
The next best cheese that cooked well in the high heat oven was the block mozzarella.
This cheese is stored in a block inside plastic. It can be frozen after purchase. I bought a large block, cut it into smaller blocks, then stored them in the freezer.
When I need to use the cheese I defrost it slightly and quickly in the microwave, then grate.
The final cheese I tested was the pre-grated cheese and the test can be seen in my blog and video here. It did not cook well in a high heat pizza oven.
The Buffalo mozzarella tasted and cooked the best on pizza out of all the three different mozzarella cheese types.
The cheese burned and cooked faster than the pizza crust, the base and the other toppings. I would only use the pre-grated cheese on a pizza cooked in an electric oven.
All these cheeses can be frozen. I freeze the buffalo mozzarella in the bag it is sold in. When I need it I cut the bag open, remove the ice water around the mozzarella ball, then defrost the ball.
I have tried a quick microwave defrost which also works well and helps dry the ball out too for the pizza cook, which is handy!
