These are my Top 5 Ooni Karu 12 pizza oven tips that I would like to share with you from my experience of using it. These are my independent, honest reviews and tips. Check out my video on YouTube!
These tips will be useful if you are thinking about buying or are new to using the Ooni Karu 12 pizza oven
THE OONI KARU 12 IS MULTI-FUELLED – YOU CAN USE IT WITH THE WOOD GRATE OR THE OPTIONAL GAS BURNER.
So let’s go through my Top 5 Ooni Karu 12 pizza oven tips!
- GAS BURNER (OPTIONAL)
The Ooni Karu 12 has a wood grate burner but this can be easily changed over to the optional gas burner.
In the video above I explain and show the two types of gas burners that can fit this oven. The Ooni Gas Burner (with round burners) is used without the chimney and with the door off.
The Ooni Karu 12 Gas Burner is used with the chimney on and the door off.
- WOOD BURNER
You can use this oven to cook pizza with the door on and off using the wood burner.
If you prefer to cook with the door off, you’ll need to build up a strong and consistent flame at the back. Your flames will pull over your pizza to cook it quickly as well as giving you the opportunity to rotate it and to see it cook.

- CAST-IRON PAN
Place your pan on the area of the stone where you need to quickly reduce the heat.
Your stone should ideally be around 430c to 450c at the centre of your pizza.
This pan will take the heat from the stone at a rate of about 100c in 60 seconds, giving you a lot more control over the heat of your stone.
THE OONI KARU 12 CAN HEAT UP IN 15 MINUTES AND COOK PIZZA IN 60 SECONDS OR LONGER IF YOU PREFER!
- GAS IS EASY – WOOD IS FUN
If you have never cooked using wood fuel before, there is a very easy setup process that you just repeat every time. I use 50% lump wood, 50% real wood logs and kindling. Check out my video here on How To Heat up and Light the Ooni Karu 12.
- KEEPING THE STONE CLEAN
Wood-fired pizza ovens have no issues with dirty stones. The heat from the fire will burn away all your debris.
All you need to do is turn the stone over at the end of your cooking day ready for the next time.
