What are the benefits?
- It will ensure you cook your pizza at the right temperature.
- You will need to heat up your pizza stone on full flame to get to 430c in the centre of the stone before you launch your pizza into the oven.
Why cook at approx 430c in the centre of the stone?
- The heat from the flame on both gas and wood-fired ovens is intense and it will quickly cook the top and crust of your pizza. However, your pizza base will also need to be cooked at the same time and speed. This is why it is so important to get your stone to the right temperature for the cook. If the stone is too cool e.g. at 400c in the middle - and if your dough is quite thick it may not cook it properly at this temperature.
If your stone is at 480c in the middle, that will be too hot and your pizza will burn at the back of the oven where the stone is even hotter when you launch your pizza in.
The great thing about rotating the pizza in the oven is that it not only cooks the crusts, it also enables the base of the pizza to pick up the different oven temperatures on the stone so that it doesn’t overcook in one place. It will rotate around the hot stone at the back through to the cooler stone by the entrance.
And the consistent 430c temperature in the centre covers that area for the cook.
