Ooni Karu 16 Gas Burner Pizza Cooking!

I bought the Ooni Karu 16 in June 2021 and it arrived last week – the gas burner arrived this week and this is my first pizza cook with it!

The Ooni Karu 16 is a multi-fuelled pizza oven and the gas burner is an optional fuel option to turn your oven into a gas-fired pizza oven.

The gas burner needs to be used with the chimney and with all the vents open.

It’s so handy to have an option to change your fuel source on a pizza oven.

The gas burner is easy to attach onto the oven at the back and ignites with one smooth click –Ooni Karu 16 gas burner setup video.

I made two pizzas for the first gas-fired cook video – the first pizza was cooked using my homemade pizza dough with the centre of the stone at a temperature of 430c.

The second pizza was cooked using Ooni Sourdough Pizza dough and with the centre of the stone at a temperature of 450c.

They both cooked very well, I kept the door closed for the cook and opened just a few times for the rotation.  There was a difference to the base of the dough – the 450c stone temperature cooked the pizza base far better than the 430c temperature.

I will use my homemade pizza dough with a 450c centre stone temperature to compare the cook between homemade and bought pizza dough – to see if there is a difference.


The first gas-fired pizza oven I've used with the door on.

    The oven took 50 minutes to heat up for this cook but only took 35 minutes for the first setup test when I made an Apple Cast-Iron pan dish.

    This is also the first time I’ve used a chimney with a pizza door on to cook a gas-fired pizza – very much the same setup as a wood-fired pizza cook.

    Today, the stock for the Ooni Karu 12 gas burner became available and now I’m looking forward to using it in the Ooni Karu 12.  With that gas burner, the chimney will need to be on the Ooni Karu 12, but the pizza door will need to remain off.

    Overall, my first impressions of the Ooni Karu 16 gas burner is that it cooks the pizza very nicely, the flames are being pulled from the back and up the chimney, as happens with the wood-fired flames which give the pizza a great top cook.  I’ve also noticed that I don’t need to rotate the pizza as often.
