How to Make Pizza Dough For High Heat Pizza Ovens!
This is my simple pizza dough recipe for both gas and wood fired pizza ovens! Check the vid out!
I use this dough recipe for all my pizza because it’s quick and easy to make. I always use the pizza dough option using a breadmaker for consistent results.
This pizza dough recipe only uses four ingredients: Flour, water, yeast and salt. That’s all you need!
Making pizza dough is super easy.
This is my go-to pizza dough 60% hydration recipe:
500g soft-grain pizza flour
300g water (150g mixed with the salt; 150g mixed with the yeast)
1 g yeast (changes with the climate)
The pizza dough recipe does not include sugar or oil. In my opinion, those two ingredients are not suitable for or necessary to use in high-heat pizza ovens. From my experience, they can cause the dough to burn or brown too fast.
I would only recommend adding sugar and oil to electric oven pizza dough recipes that are cooked on a much lower heat.
I keep the yeast and salt separate as I have experienced the salt fizzing out the yeast when they made contact so would rather keep them away from each other!
Once all the ingredients are added to the pan I quickly stir in then start the breadmaker.
60% hydration dough is easy to stretch and work with.
I prefer to bulk-proof the dough in both the fridge and at room temperature.
My favourite way to proof pizza dough is to place the dough in the fridge in an air-tight container for a few days, then bring the dough back to room temperature for 24 hours, timed so that it will be warm and ready for the pizza cook.
