Cast Iron Pan Pizza using the Ooni Karu 12
The best cast iron pans to use in a pizza oven are the ones with detachable handles. To find out why check the video!
As long as the pan is made of cast-iron to withstand the intense heat of a pizza oven you are good to go! I would recommend a pan that you can turn around in the pizza oven and I will explain why in more detail below:
I used the Ooni Cast-iron pan because it has a detachable handle with a hook on both sides of the pan.
Generally, I would recommend heating the cast-iron pan in the pizza oven first and then adding your ingredients. However, this can be tricky when you are using pizza dough! For steak it’s fine.
Firstly, I heated the oven up for about 10 minutes on full gas flame. During that time I added the pizza dough to the cold pan along with the other ingredients.
Using a cast iron pan with a detachable handle gives you the added benefit of turning the uncooked side toward the flame. Having a handle hook on both sides gives you something to grab to manouevre it around.
After about 6 minutes the pizza was cooked and ready to eat!
DETACHABLE HANDLES ARE RECOMMENDED OTHERWISE THE PAN CAN'T BE TURNED AROUND TOWARD THE FLAME IN THE PIZZA OVEN FOR AN EVEN COOK
The only downside to cooking pizza from a cold cast-iron pan is that the dough at the base looks pale after the cook. However, when I add pizza dough to a hot pan, it turns golden in colour and has a crustier base.
But other than that the taste of the pizza and the toppings is the same and you can add your favourite ingredients to this dish.
I pre-cook my onions, mushrooms and meats before adding to the pan.
