Calzone Cooked in 75 Seconds using the Ooni Koda 16 Pizza Oven
I didn’t overfill this calzone – I needed to keep it thin so that the fillings cooked fast!
I don’t cook that many calzones and when I do, they are normally quite small and fully loaded inside.
The challenge with cooking calzone is that the inside needs to get hot fast to cook fast. So, the more there is inside it, the greater the challenge for the new pizza cook.
For this calzone I added enough meat, cheese and sauce to provide a nice balanced taste.
But not only that, I wanted to cook this calzone fast and in 75 seconds I had to make sure that the crust, the base and everything inside was cooked at the same time.
On the other hand, I wouldn’t expect to cook a fully-loaded calzone in less than 3 minutes as I’d need to use a lower flame in the Ooni Koda 16.
For a fast-cooked calzone I would recommend using ingredients that cook and heat up fast in the oven. And that also applies to a deep-filled calzone.
for this 75 second calzone cook I pushed the Ooni Koda 16 to it's fullest gas fired flame.
Otherwise the crust and base of the calzone will end up fully cooked before the filling. So, cooking a deep-filled calzone should take longer and would benefit from being cooked on a lower flame.
The high flame flickering near the sourdough for this cook gave some super leoparding and the amount of filling in there complemented the thin dough – super tasty!
